The Miyabi 5000FCD Nakiri Utility Knife 170mm is built for precision vegetable preparation in professional kitchens. Handcrafted in Seki, the 170mm blade combines advanced steel technology with traditional Japanese craftsmanship. An FC61 fine carbide steel core is protected by 48 layers of stainless steel, creating the distinctive Damascus pattern across the blade. FRIODUR ice-hardening delivers a hardness of 61 HRC, providing excellent edge retention, corrosion resistance.

The blade is finished using Miyabi’s traditional three-step Honbazuke honing process. The Miyabi 5000FCD Nakiri Utility Knife has a razor-sharp 19° symmetrical edge for precise cutting.
