The blades are FRIODUR ice-hardened to 61 Rockwell hardness for superior strength, corrosion resistance and flexibility under demanding commercial use.

Finished using Miyabi’s traditional Honbazuke honing process, the 5000FCD Gyutoh Chefs Knives are sharpened to precise 19° symmetrical edges for razor-sharp cutting performance.
