- What do you need to wash? How many of each item, how dirty are they and what sizes are they?
- What space do you have available or if replacing an existing machine, how many wash cycles a day do you currently complete and does your machine meet your existing and future needs?
- Would you prefer an undercounter or a pass through / hood type machine?
- Do you have an exhaust canopy to go over the hood machine?
Other factors that you should consider
How much labour is required to complete the daily operation – washing and cleaning?
Labour is the single most expensive part of the process. Reducing labour is challenging but not impossible. Small gains can be made by selecting a machine -

How much water does the machine use per cycle?
It varies dramatically from brand to brand. Using 0.5 of a litre of water less per cycle, when washing 100 cycles a day can save up to 18,250 litres of water per year, 54.75 litres of detergent and 5.475 litres of rinse aid, plus the heating energy. The cost savings can easily outweigh the savings made when buying a cheaper machine.
The range of HOBART machines use as low as 0.8 litres per cycle (), 1.8litres for the PROFI FX and 2litres for the ECOMAX504 and ECOMAXPLUSF515.

To exhaust or not to exhaust – do you need a canopy?
All Councils follow the same national guidelines. The basic rule is simple, unless the machine is approved & certified for ventless installations do not assume that a pass-through machine does not need a canopy above it.
